When you only have 20 minutes to make dinner, this easy ground beef and broccoli recipe will save your butt!
This easy and inexpensive ground beef and broccoli dish comes together in just 20 minutes!

I honestly don’t know how or when the obsession started but I LOVE any Asian-themed food, but never order it out because I don’t want all the seed oils and low-quality meat you typically get at restaurants. Enter: this easy ground beef and broccoli stir fry. I loved coming up with this recipe for so many reasons. It’s ready in under 30 minutes, minimal prep, inexpensive, and packed with so much wholesome goodness. Plus it’s fun enough even for a date night!

My kids are obsessed with broccoli! So we always make sure to have some in the freezer.
You probably already keep these things stocked in your freezer: ground beef and broccoli. But you can also freeze ginger and chives or green onions, too!

What’s even better is that you probably already have all the ingredients at home (or you’ll stock up on them once you find out how easy it is to throw this together). Not only that but organic grass-fed steak is SO expensive! Using ground beef makes this take-out worthy dish so much more affordable, and gives you a very similar taste!

Check out these easy, cheap ingredients:

  • Ground beef – Opt for organic, grass-fed beef whenever possible. Regeneratively farmed it also ideal!
  • Broccoli florets
  • Ginger root or granulated ginger
  • Green onions or chives
  • Apple cider vinegar
  • Coconut aminos – I always use this instead of soy sauce
  • Chicken or beef broth or stock
  • Arrowroot powder — acts as a thickener for sauces
  • Coconut sugar – this recipe needs a little sweetness to make it taste like take-out worthy beef and broccoli. I opt for unrefined natural sugar whenever possible!
  • Avocado oil
  • Salt and pepper

If you don’t count the salt and pepper, that’s only 10 ingredients!

We always have ground beef and broccoli in our freezer and those are the two main ingredients! Did you know you could freeze chives, green onions, and ginger? Ginger is one of those things I always like to have on hand for salad dressings, smoothies, and other recipes, but I always forget to pick it up when I’m at the store. Freezing it makes life so much easier! A big recommendation I have is to chop the ginger into 1 inch chunks and remove the skin before freezing. I learned the hard way it’s very difficult to cut off chunks when frozen.

Another freezer staple: chives and green onions. They don’t look pretty after you defrost them, but who cares!? They add so much flavor to a dish.

We always keep our fridge stocked with apple cider vinegar, garlic, coconut aminos, and chicken stock or broth and our pantry with salt, pepper, coconut sugar, arrowroot powder, and avocado oil. How much easier could this dish get?!

How to Make

  1. First, make the stir fry sauce by adding 4 cloves of garlic, 1.5 tbsp apple cider vinegar, ¾ cup coconut aminos, ½ cup chicken stock or bone broth, 2 tsp coconut sugar, 3 tbsp arrowroot powder, 1 inch ginger to a food processor. Process until everything is combined.
  2. Season a pan or wok with about 1-2 tablespoons of avocado oil and cook the broccoli. Add a generous pinch of salt and a sprinkle of pepper. If using frozen broccoli, cook for about 8 minutes. If fresh, cook for about 5-6 minutes. Adjust the time if you find the broccoli is getting too soft/soggy! Then remove the broccoli from the pan.
  3. Add the ground beef to the pan and cook until brown then return the broccoli to the pan and add the sauce and green onions. Cook for another 3-4 minutes. Garnish with some more green onions and sesame seeds enjoy!

Options & Substitutions

Meat

I haven’t tried this myself yet, but you could also try to substitute the ground beef for ground turkey or chicken if you have that on hand.

We always make this dish with 2 pounds of beef because my husband eats a lot (no really, A LOT) and I like to have leftovers for the next day. But if your family eats a normal amount or you don’t like leftovers, reduce meat to 1 lb and adjust the ingredients accordingly.

Green onions/chives

Personally, I would use green onions for this dish because they pack more of a punch, but when I photographed this I only had chives on hand. If you're in the same boat, just use as many chives as you have! You could even use red onions although the taste will be slightly different.
